Day 130 Of Coronavirus Shutdown

Good morning bloggers. 

We are on day 130 of the Coronavirus shutdown. It's hard to believe that this has been going on for this long and still no end in sight. I remember when my shutdown first started, I actually thought it wouldn't last any longer than two weeks. Maybe a month at the very longest lol. Boy was I wrong.

Now I'm 130 days into this shutdown and counting. It has been a lot of staying home. A lot of sanitizing and good hygiene. A lot of cleaning and watching Cuomo press briefings lol. A lot of mask wearing and a lot of blogging. Another thing I've been doing a lot of? Well, cooking of course.

My wife is still working through this pandemic as she is a nurse. (God bless her and all essential workers). So I do everything there is to do at the homestead. And I actually really enjoy it. It is meaningful work. I love taking care of my little family. So making sure I have a hot meal on the table for my essential worker is a must in my opinion. She deserves it.

My wife and I celebrated our 6th wedding anniversary this month. The iron anniversary. So she gifted me a cast iron skillet. I have been learning and using it like crazy lol. 

Two of the meals I made last week. 
I wanted to try my hand at a cast iron skillet pizza. I didn't make the dough. I have to be honest about that lol. But let me tell you, it was delicious. Bell pepper, onion, garden fresh tomatoes, black forest ham, and garden fresh oregano. (So good). 
The next night I decided to try my hand at a cast iron skillet chicken pot pie. Something my wife has told me she usually doesn't like. (Chicken pot pie I mean). However she LOVE this one!
Typically a pot pie has veggies like carrots, peas, celery etc. All things my wife doesn't typically like. So I made my own chicken pot pie without those. Ours had Chicken, corn, green beans, onions, bell peppers, and red cabbage.
It's been fun having a little extra time to spend in the kitchen. And I know my wife has enjoyed the results lol.

When you're in a pandemic you have to try to see the silver lining in things. And I know that in the current times we're living in that can be hard and feel almost impossible. But we have to try. This is one of my silver linings. Having free time to make delicious meals. I'll take it!

Now, I didn't talk about the Coronavirus yesterday. And for the most part I haven't talked about it today. However it is still happening. It's not over. I'm not going to go into great detail, but I'am going to share a video with you all that Gov, Cuomo released a couple of days ago.

The Coronavirus doesn't care about your age, it doesn't care about your gender, it doesn't care about your race, and it doesn't care about your politics. The Coronavirus doesn't discriminate. The Coronavirus infects and kills. We have to take it seriously.
